Description

Homemade blueberry bagels are a delightful way to start the day, especially when packed with rich blueberry flavor. By carefully preparing the blueberries and following a few key steps, you’ll achieve bagels that are perfectly chewy with bursts of sweet, tangy fruit in every bite.

Ingredients

  • 1 cup fresh blueberries (or 1/2 cup dried or freeze-dried blueberries)

  • 1 tablespoon sugar (for roasting fresh blueberries)

  • 3 1/2 cups bread flour (for chewiness)

  • 2 teaspoons instant yeast (for rise)

  • 1 tablespoon sugar (for slight sweetness)

  • 1 teaspoon salt (for balance)

  • 1 cup warm blueberry juice (or water for a milder flavor)

  • 1 tablespoon honey or blueberry syrup

  • 1 teaspoon vanilla extract

  • 1 tablespoon honey (for boiling water)

Instructions

Step 1 – Prepare the Blueberries

Choose one of the following methods:

Option 1: Roast Fresh Blueberries

  1. Preheat oven to 375°F (190°C).

  2. Spread 1 cup fresh blueberries on a baking sheet and sprinkle with 1 tablespoon sugar.

  3. Roast for 10 minutes until slightly caramelized.

  4. Let them cool before adding to the dough.

Option 2: Rehydrate Dried Blueberries

  1. Soak 1/2 cup dried blueberries in warm blueberry juice for 10 minutes.

  2. Drain and pat dry before adding to the dough.

Option 3: Use Freeze-Dried Blueberries

  1. Crush 1/2 cup freeze-dried blueberries into a fine powder.

  2. Mix directly into the flour for a uniform taste.

Step 2 – Make the Dough

  1. In a stand mixer fitted with a dough hook, combine:

    • 3 1/2 cups bread flour

    • 2 teaspoons instant yeast

    • 1 tablespoon sugar

    • 1 teaspoon salt

  2. Gradually add:

    • 1 cup warm blueberry juice

    • 1 tablespoon honey or blueberry syrup

    • 1 teaspoon vanilla extract

  3. Knead the dough for 8–10 minutes until smooth and elastic.

Step 3 – Incorporate Blueberries

  1. Gently fold in prepared blueberries.

  2. Avoid overmixing to prevent fresh blueberries from breaking.

Step 4 – First Rise

  1. Place dough in a lightly greased bowl.

  2. Cover and let rise for 1–1.5 hours until doubled in size.

Step 5 – Shape the Bagels

  1. Divide dough into 8 equal portions.

  2. Roll each portion into a smooth ball.

  3. Poke a hole in the center and stretch into a bagel shape.

Step 6 – Second Rise

  1. Let shaped bagels rest for 20 minutes.

  2. Meanwhile, bring a large pot of water to a boil.

Step 7 – Boil the Bagels

  1. Add 1 tablespoon honey to boiling water.

  2. Boil each bagel for 30–60 seconds per side.

  3. Remove with a slotted spoon and place on a parchment-lined baking sheet.

Step 8 – Bake to Perfection

  1. Preheat oven to 400°F (200°C).

  2. Bake for 18–22 minutes until golden brown.

  3. Optional: Brush with blueberry syrup for a glossy finish.

Notes

  1. Roasting fresh blueberries enhances sweetness and prevents excess moisture
  2. Dried blueberries give a concentrated flavor without affecting dough texture
  3. Freeze-dried blueberries provide an even distribution of flavor
  4. For extra shine, brush bagels with blueberry syrup before baking.
